Funfetti Cookies

- Preheat oven to 375 F.
- Mix oil and eggs together, then add Funfetti mix. Stir until lumps of mix disappear.
- Spoon cookie mix onto baking sheet (preferably lined with parchment paper or a Silpat). You can make the cookies as big or as small as you want. I usually make them about the size of a rounded tablespoon.
- Bake cookies for 7-10 minutes, depending on how chewy/crispy you want them. The cookies won't turn brown unless they are overcooked since the dough is white.
- I usually squish the cookies with a spatula about halfway through baking so they aren't too puffy.
- After cookies are cool, top with Rainbow Chip frosting.

1 cup + 1 tablespoon sugar
1 cup brown sugar
1/2 cup butter, softened to room temperature
2 cups flour
2 teaspoons baking powder
1.5 teaspoons salt
1/2 + 1/8 teaspoon cinnamon
2 eggs

1 cup Granny Smith apple, peeled and diced
1 cup chopped pecans

- Preheat oven to 350 F.
- Grease a 9x13 baking pan with Crisco.
- Set out butter to soften. Let it get to room temperature; don't rush.
- Combine flour, baking powder, salt, and 1/2 teaspoon cinnamon. Set aside.
- Mix 1 cup white sugar with brown sugar, butter, eggs, vanilla, apples, and nuts. Stir in flour mixture and spoon batter into baking pan.
- Combine remaining sugar and cinnamon, then sprinkle on top of batter.
- Bake for 30-40 minutes. Let cool before cutting into squares.
Monster Cookies

2 sticks (1/2 Pound) butter (salted), softened to room temperature
1/2 cup White Sugar
1.5 cups Brown Sugar, Packed
2 whole Large Eggs
1 Tablespoon Vanilla Extract
1.5 cups All-purpose Flour
1/2 teaspoon Baking Soda
1 teaspoon Baking Powder
2 teaspoons Salt
1.5 cups Oats (either Quick Or Regular)
1 cup M & Ms (more to taste)
1 cup Chocolate Chips (milk Or Semi-sweet, more to taste)
1/2 cup creamy peanut butter
2 and 1/4 cups Rice Krispies

- Preheat oven to 375 degrees.
- Set out butter to soften at room temperature.
- Cream softened butter with sugars in mixer until fluffy. Add eggs one at a time, beating well after each addition. Add vanilla and beat. Add in peanut butter and mix until blended.
- Combine flour, baking soda, baking powder, and kosher salt in medium mixing bowl. Add to mixing bowl and mix until combined. After that, add in remaining ingredients in whatever quantity you prefer. Add more M & Ms or chocolate chips if you'd like.
- Add Rice Crispies at the very end, mixing until just combined. Do not overmix!
- Use 1/4 tablespoon measuring spoon to scoop balls of dough onto a cookie sheet (preferably lined with parchment paper or a Silpat). I usually use a little less than 1/4 tablesoon.... this makes a big cookie!
- Bake until golden brown, then allow to cool on a rack. Do not over-bake unless you like very crunchy cookies. I usually bake them for about 8 minutes.
Lazy Cake Cookies

- Preheat oven to 350 F. Grease a 9x9 brownie pan.
- Place stick of butter in glass, microwave-safe mixing bowl. Melt butter in microwave.
- Let butter cool so it's not scalding hot. Then mix in eggs.
- Mix in cake mix.
- Mix in chocolate chips. If you mix these in first, they will melt.
- Spoon batter evenly into greased pan.
- Bake at 350 F for 20 minutes.
